Your hosts and tutors are acclaimed chefs who use the freshest ingredients with an emphasis on distinct flavours and clean, meticulous presentation. Their passion and enthusiasm for cooking will stimulate your own love of food, and their expertise will help you gain confidence and perfect your cooking skills and techniques in the kitchen.
Your accommodation in the renovated farmhouse is set in a walnut grove in the heart of idyllic rural France. The house is surrounded by its own gardens, where in lovely weather you can play boules or croquet, or simply relax in the sun. The four luxuriously appointed en-suite bedrooms are situated on the first & ground floors and have stunning views stretching over the countryside.
Day 1: Arrive at Cooking School and settle into your luxurious farmhouse accommodation Arrive at your accommodation and settle in. This evening join your hosts for an introduction to the course followed by a welcome glass of champagne. Later, sit down to a gourmet 6 course dinner.
Day 2: Hands on cooking classes Enjoy breakfast before meeting your chef mid morning for an initial introduction to the kitchen. Learn basic knife skills, care of knives, safety, sharpening and simple cuts to a range of vegetables. Your day progresses with a range of demonstrations and hands-on classes including bread making, stocks, preparing salmon and trout. Lunch and dinner today are the results of your labour.
Day 3: Cooking class and excursion This morning the focus is on pasta, learn how to make the perfect pasta dough, followed by making chicken & foie gras mousse, and rich sweet pastry. Following lunch the group will depart on an excursion to either the local cider farm or a 19th century windmill producing buckwheat flour by traditional methods. Dinner this evening back at the farmhouse.
Day 4: Cooking class and excursion This morning is for a demonstration of: Ice-creams (caramelised banana, cinnamon) sugar work, chocolate piping, honey wafer baskets and tuille work. Then a maitre artisan patissier will visit and teach you to make croissants and macaroons.
Day 5: Cooking class and gourmet BBQ lunch A diverse morning of preparation and cooking today followed by a gourmet barbecue lunch and a relaxing afternoon playing boules or croquet.
Day 6 : Depart the Farmhouse Depart after breakfast.
