Distinct but complementary, the Lazio region offers a unique experience with an ancient taste of unmistakable beauty. Sample Lazio wines in Rome with authentic cooking to discover forgotten dishes, learn the secrets of seafood preparation with local fisherman, indulge in homemade bread tastings, and traverse ancient villages renowned for the gluttony of its food and wine specialties. This is Italian cuisine at its best!
Day 1: Rome Arrive in Rome and check into the luxurious and exclusive Hotel De Russie with a tasting of Lazio wines led by a sommelier. Later, show-cooking and a breathtaking dinner hosted by Chef Renato Trabalza at the historic Trattoria Sora Lella. Authentic cooking to re-discover forgotten dishes made with only true Roman local products. Overnight at the Hotel De Russie.
Day 2: Rome > Fiumicino > Labico Head towards the coast of Rome to the port town of Fiumicino, gathering of the Tellina, a rare mollusc and a Slow Food Presidium rediscovered after years of disappearance. Lunch at the popular fish restaurant Pascucci with Chef Gianfranco Pascucci (1-star Michelin). Moving inland, visit the ancient town of Labico in the heart of the Castelli Romani. Dinner and overnight at the Antonello Colonna resort, restaurant of the chef Antonello Colonna (1-star Michelin).
Day 3: Labico > Anzio > Nettuno At the ancient Roman port of Anzio, learn the secrets of seafood preparation with a local fishermen cooperative. Participate in the choice of fish just off loaded from the boats, and in the immediate processing in the laboratory. Lunch at the seaside restaurant La Fraschetta del Mare. Afternoon stop for a honey tasting in the old port town of Nettuno. The day ends with a dinner at Satricvm restaurant, where Chef Maximiliano Cotilli presents emerging and innovative local cuisine.
Day 4: Nettuno > Labico > Lariano Visit the farmers market in Labico and prepare lunch with Chef Antonello Colonna with locally grown produce. Later, in the park of the Castelli Romani at the old town of Lariano, indulge in a homemade bread tasting of Lariano PDO, where bread has been baked for centuries. Dinner at the Aminta Resort by the talented Chef Marco Bottega (1-star Michelin).
Day 5: Lariano > Frascati > Ariccia Transfer to the ancient village of Frascati. Perhaps the most famous of the Castelli Romani, the village is renowned for the elegance of its Tuscolan Villas as well as for the gluttony of its food and wine specialties. Hosted by the master Gelatiere Dario Rossi, guests will pick and gather fruit and vegetables from the biodynamic garden. These Ingredients will then be used for the preparation of a true farmers ice cream. Lunch at the restaurant Belvedere 1933, with a breathtaking view that extends beyond the borders of Rome. Later, in the ancient town of Ariccia, discover the much-debated confrontation of the "porcellum" with an exclusive tasting to compare two of the most important realities in terms of porchetta, that of Ariccia and Frascati. Returning to Rome, stop at the innovative restaurant Spazio designed by 3-star Michelin Chef Niko Romito. Contemporary Italian cuisine based on respect for tradition, research and innovation, with particular attention to raw produce and exquisite preparation.
